Gentle Steamed Vegetables

A simple side of softly steamed carrot, green beans and zucchini. Easy to prepare, easy to adapt and useful on lower-capacity days.

Simple and adaptable. This recipe uses just three vegetables and a small amount of butter, Nuttelex or mild olive oil. Keep it plain or add optional parsley and salt according to your own needs and tolerance.

Ingredients

Serves 2–3

  • 1 medium carrot, sliced into thin rounds
  • 1 cup green beans, trimmed and halved
  • 1 medium zucchini, sliced into half-moons or ribbons
  • 1–2 tsp Nuttelex Original, butter or mild olive oil
  • Salt, optional
  • Parsley, optional

Make It Easier

On a lower-capacity day, reduce the preparation wherever you can.

  • Use pre-trimmed green beans.
  • Use pre-cut carrot if suitable.
  • Cut the zucchini into simple half-moons rather than ribbons.
  • Leave out the parsley.
  • Serve directly from the steamer if that means less washing up.

It does not need to look perfect. Simple food still counts.

Serve With

Pair the vegetables with something simple, such as:

  • lamb patties
  • roasted or sautéed chicken
  • steak
  • fish
  • mashed potato
  • mashed swede

Method

1 Prepare the vegetables

Slice the carrot into thin rounds.

Trim and halve the green beans.

Slice the zucchini into half-moons or ribbons.

2 Start steaming

Place the carrot and green beans into the steamer basket.

Steam for about 5 minutes.

3 Add the zucchini

Place the zucchini on top of the carrot and beans.

Steam for another 3–4 minutes.

The vegetables should be soft and cooked through, but not mushy.

4 Finish

Remove the vegetables from the heat.

Gently toss with your choice of:

  • Nuttelex Original
  • butter
  • mild olive oil

Add salt or parsley if suitable.

5 Serve

Serve warm as a simple vegetable side.

Low FODMAP

The recipe can be prepared as a Low FODMAP vegetable side using the quantities shown.

Individual tolerance and serving size can still matter, particularly during a structured elimination phase.

RPAH Friendly

Peel the zucchini before slicing.

Use fats and seasonings that fit the version of the diet you are following and your own tolerance.

RPAH Plus

The zucchini can be used with the skin left on if this suits your individual tolerance.

Gluten-Free

The basic vegetables are naturally gluten-free.

Check any packaged spread or seasoning if needed.

Dairy-Free

Use Nuttelex Original or mild olive oil instead of butter.

Vegetarian

The vegetable recipe is vegetarian.

Use butter, Nuttelex or olive oil according to preference.

Vegan

Use Nuttelex Original or mild olive oil rather than butter.

Softer Texture

Steam the vegetables for a little longer if you prefer a softer texture.

Cutting the carrot more thinly can also help it soften sooner.

Sensitive to Flavours or Ingredients

Keep the vegetables plain if this works better for you.

  • Leave out parsley.
  • Leave out salt.
  • Choose the butter, spread or oil that you already know suits you.
Lower Capacity
  • Use pre-cut vegetables where practical.
  • Choose only two vegetables if three feels like too much.
  • Serve with a very simple protein.
  • Use the steamer basket as the serving container if this reduces washing up.
