- 🍳 Method (Low-Amine Friendly)
- Cook gently – no browning
- Steam green beans 4–5 min until just tender
- Steam tofu 2–3 min, just warmed
- Blanch bean sprouts 30 sec, drain
- Wilt chosen greens with boiling water, drain well
- (If using spinach: quick wilt only)
- Eggs
- Soft–medium boil (6–7 min). Peel just before serving.
- Sauce
- Whisk all sauce ingredients until smooth and pourable.
- Do not heat.
- Assemble
- Greens → green beans → bean sprouts → cucumber
- Add tofu and halved egg
- Spoon over sauce and serve immediately
