Gentler GADO GADO

Course: Main Course

Ingredients
  

  • 200 g very fresh firm tofu plain
  • 2 eggs (optional leave out for vegan)
  • Vegetables
  • 1 cup green beans topped & tailed
  • 1 cup bean sprouts very fresh
  • ½ –1 cup cucumber sliced (peeled if sensitive)
  • Greens e.g. Lettuce, bok choy lightly wilted, or small amount of fresh baby spinach choose one base
  • bok choy
  • cos / romaine lettuce lightly wilted
  • Peanut–Tahini Sauce
  • tbsp smooth peanut butter fresh jar, no additives
  • tbsp tahini
  • 2 –3 tbsp warm water
  • Pinch salt

Method
 

  1. 🍳 Method (Low-Amine Friendly)
  2. Cook gently – no browning
  3. Steam green beans 4–5 min until just tender
  4. Steam tofu 2–3 min, just warmed
  5. Blanch bean sprouts 30 sec, drain
  6. Wilt chosen greens with boiling water, drain well
  7. (If using spinach: quick wilt only)
  8. Eggs
  9. Soft–medium boil (6–7 min). Peel just before serving.
  10. Sauce
  11. Whisk all sauce ingredients until smooth and pourable.
  12. Do not heat.
  13. Assemble
  14. Greens → green beans → bean sprouts → cucumber
  15. Add tofu and halved egg
  16. Spoon over sauce and serve immediately

Notes

 Low-Amine Notes
Use very fresh ingredients
Eat straight away (or refrigerate <12 hrs)
Do not reheat greens or sauce
Spinach = optional only on good days
