Scrambled Eggs with Bok Choy

Servings: 1

Ingredients
  

  • 2 eggs whisked
  • 1 cup chopped bok choy
  • 2 Tbsp chopped fresh chives
  • 1 tsp mild olive oil
  • Pinch salt

Method
 

  1. Heat oil in non-stick pan.
  2. Add bok choy and cook 2–3 minutes until just wilted.
  3. Pour in eggs, sprinkle with chives, and gently scramble until cooked.
