Method
- Heat oil in a non-stick pan over medium heat.
- Add grated carrot or zucchini; sauté 1–2 minutes until soft.
- Add rice; stir through gently to warm and coat with oil.
- Push rice to one side of the pan and crack in the eggs.
- Scramble lightly, then mix through rice until evenly coated and just set.
- Sprinkle chives or parsley on top.
