Baked Lamb and Sweet Potato Tray

Ingredients:

  • 200g diced lamb
  • 1 cup sweet potato (cubed)
  • ½ zucchini (sliced)
  • 1 tbsp olive oil
  • Pinch salt

Instructions:

  1. Toss lamb and vegetables with oil and salt.
  2. Bake covered at 180°C for 25–30 minutes.
  3. Serve warm with optional parsley.
