Simple Veggie Rice with Egg

Servings: 1

Ingredients
  

  • 1 cup Rice
  • 2 eggs
  • Oil spray
  • ¼ cup grated carrot and 1/4 cup finely chopped zucchini peeled
  • 1 tbsp chopped chives or parsley
  • Pinch salt optional

Method
 

  1. Heat oil in a non-stick pan over medium heat.
  2. Add grated carrot or zucchini; sauté 1–2 minutes until soft.
  3. Add rice; stir through gently to warm and coat with oil.
  4. Push rice to one side of the pan and crack in the eggs.
  5. Scramble lightly, then mix through rice until evenly coated and just set.
  6. Sprinkle chives or parsley on top.
