Root Vegetable Mash

A creamy, soothing mash made from tolerated root vegetables — perfect for pairing with rissoles, fish, or soft proteins.


🍽️ Serves: 3–4

Prep time: 10 minutes
Cook time: 20–25 minutes
Zone-Friendly: 🟢 Green to 🔴 Red (can be prepped or frozen)


📝 Ingredients:

  • 2 white potatoes, peeled and chopped (~400g)
  • 2 medium carrots, peeled and chopped
  • 200g swede or parsnip, peeled and chopped
  • 1–2 tbsp rice bran oil or Nuttelex (DF spread)
  • Salt, to taste
  • Optional: splash of rice milk or broth for creaminess (low-histamine, low-salicylate only)

👩‍🍳 Method:

  1. Peel and chop all vegetables into even-sized chunks.
  2. Place in a saucepan, cover with water, and bring to a boil.
  3. Simmer for 20–25 minutes, or until all vegetables are soft.
  4. Drain well and return to pot.
  5. Add oil/DF spread and mash until smooth.
  6. Add salt to taste. Optional: a little liquid (milk or broth) for softer texture.
  7. Serve warm as a side.
