📝 Ingredients:
- 2 white potatoes, peeled and chopped (~400g)
- 2 medium carrots, peeled and chopped
- 200g swede or parsnip, peeled and chopped
- 1–2 tbsp rice bran oil or Nuttelex (DF spread)
- Salt, to taste
- Optional: splash of rice milk or broth for creaminess (low-histamine, low-salicylate only)
👩🍳 Method:
- Peel and chop all vegetables into even-sized chunks.
- Place in a saucepan, cover with water, and bring to a boil.
- Simmer for 20–25 minutes, or until all vegetables are soft.
- Drain well and return to pot.
- Add oil/DF spread and mash until smooth.
- Add salt to taste. Optional: a little liquid (milk or broth) for softer texture.
- Serve warm as a side.
