Gentle Lamb Rissoles

Soft, savoury lamb patties made with simple, tolerable ingredients. Great for freezing, meal prep, or pairing with gentle sides like mashed sweet potato or steamed vegetables.

📝 Ingredients:

  • 500g fresh lamb mince (grass-fed, no additives)
  • 1 medium carrot, finely grated
  • 2 tbsp chives or parsley, finely chopped (omit for ultra-low salicylate)
  • 1 tsp rice bran or canola oil (or DF spread)
  • ¼ cup rice flour or GF breadcrumbs (omit if grain-free)
  • 1 small zucchini, grated and squeezed (optional for added moisture)
  • egg (optional, helps bind – omit if allergic)
  • Salt, to taste
  • 1 tsp suitable homemade broth or water (optional, for moisture)

👩‍🍳 Method:

  1. In a bowl, mix all ingredients until well combined.
  2. Form into small patties/rissoles (about 2 tbsp each).
  3. Heat a non-stick pan or skillet over medium heat.
  4. Add a little oil or DF spread if needed.
  5. Cook rissoles for 4–5 minutes per side, until golden and cooked through.
  6. Rest briefly, then serve warm with suitable sides.
