📝 Ingredients:
- 500g fresh lamb mince (grass-fed, no additives)
- 1 medium carrot, finely grated

- ¼ cup rice flour or GF breadcrumbs (omit if grain-free)
- 1 small zucchini, grated and squeezed (optional for added moisture)
- 1 egg (optional, helps bind – omit if allergic)
- Salt, to taste
- 1 tsp suitable homemade broth or water (optional, for moisture)
👩🍳 Method:
- In a bowl, mix all ingredients until well combined.
- Form into small patties/rissoles (about 2 tbsp each).
- Heat a non-stick pan or skillet over medium heat.
- Add a little oil or DF spread if needed.
- Cook rissoles for 4–5 minutes per side, until golden and cooked through.
