Poached Chicken Breast

This method yields soft, moist chicken with a bland, non-irritating flavor — perfect for sensitive systems and elimination-style diets.

📝 Ingredients:

  • 2 small chicken breast fillets (approx. 120–150g each), skinless and boneless
  • 1 tsp salt, or to taste
  • Optional aromatics for broader tolerance:
    • 1–2 stems chives or a few slices of leek (white part only) (omit if sensitive)
    • 1–2 slices of zucchinicelery, or choko for mild background flavor
  • Water to cover

🔪 Method:

  1. Place chicken breasts in a small saucepan and cover with cold water by about 2 cm.
  2. Add salt and any optional low-reactivity aromatics.
  3. Bring to a gentle simmer over medium heat (do not boil).
  4. Once bubbling softly, reduce heat, cover, and simmer gently for 10–12 minutes.
  5. Turn off heat and let sit covered for 5–10 minutes to finish cooking in residual heat.
  6. Remove from water and serve sliced or shredded.
