This baked lamb and sweet potato tray is a simple one-pan meal that is easy to prepare and full of gentle flavour. The lamb cooks alongside sweet potato and zucchini in the oven, allowing everything to soften and caramelise together.
Because it uses just a few ingredients and minimal preparation, it works well for an easy everyday meal. A small sprinkle of fresh parsley at the end adds a little brightness, but the dish is just as good served simply straight from the tray while warm.

Ingredients:
- 200g diced lamb
- 1 cup sweet potato (cubed)
- ½ zucchini (sliced)
- 1 tbsp olive oil
- Pinch salt
Instructions:
- Toss lamb and vegetables with oil and salt.
- Bake covered at 180°C for 25–30 minutes.
- Serve warm with optional parsley.
